Cette action de mobilisation nationale consiste \u00e0 remplacer chaque lundi la viande et le poisson. Lors de la premi\u00e8re campagne\u00a0<a href=\"https:\/\/www.lemonde.fr\/idees\/article\/2019\/01\/02\/l-appel-des-500-pour-un-lundi-vert-nous-nous-engageons-a-remplacer-la-viande-et-le-poisson-chaque-lundi_5404460_3232.html\">lanc\u00e9e en janvier 2019<\/a>, 500\u00a0personnalit\u00e9s s\u2019\u00e9taient engag\u00e9es \u00e0 manger v\u00e9g\u00e9tarien le lundi, en invitant les Fran\u00e7ais \u00e0 faire de m\u00eame. Le premier\u00a0<a href=\"https:\/\/www.lemonde.fr\/planete\/article\/2019\/03\/01\/premier-bilan-encourageant-pour-l-operation-lundi-vert_5430283_3244.html\">bilan \u00e9tait encourageant<\/a>, avec un bon suivi, notamment dans la\u00a0<a href=\"https:\/\/www.francetvinfo.fr\/sante\/alimentation\/le-lundi-vert-mis-en-place-dans-les-restaurants-universitaires_3654639.html\">restauration universitaire<\/a>.
