Faire chauffer l&rsquo;huile d&rsquo;olive dans la po\u00eale. Une fois l&rsquo;huile chaude, y mettre le cumin et le curry et remuer pendant 30 secondes pour r\u00e9v\u00e9ler les ar\u00f4mes. Y ajouter les tranches de tofu \u00e9goutt\u00e9es, saler, poivrer et faire revenir des 2 c\u00f4t\u00e9s pendant 2 minutes chaque. En fin de cuisson, ajouter le tamari, m\u00e9langer et pr\u00e9server hors du feu avec un couvercle pour garder au chaud.<\/li>\n<li>\u00a0Laver et ciseler les pousses d&rsquo;\u00e9pinard. Les d\u00e9poser dans l&rsquo;assiette avec un filet d&rsquo;huile de chanvre ou d\u2019olive. Y d\u00e9poser les cerneaux de noix.<\/li>\n<li>\u00a0Couper le chou rouge en lamelles. Pr\u00e9parer la sauce en m\u00e9langeant dans l&rsquo;ordre, la moutarde, le vinaigre de cidre et l&rsquo;huile d&rsquo;olive de fa\u00e7on \u00e0 faire un m\u00e9lange \u00e9pais bien \u00e9mulsionn\u00e9. Passer les graines de tournesol dans le fond d&rsquo;une casserole pendant 30 secondes (ne pas les faire noircir) et les m\u00e9langer une fois refroidies au choux et \u00e0 la sauce moutarde.<\/li>\n<li>\u00a0Disposer dans l&rsquo;assiette le riz (se servir d&rsquo;un bol pour la pr\u00e9sentation), les crudit\u00e9s et les tranches de tofu.
